My family prefers fresh spinach over cooked, so Fresh Spinach Day is perfect. A nice spinach salad with pecans, feta, croutons, and a reasonable amount of sesame dressing is light, healthy, and refreshing.

July 16th is Personal Chef Day. Maybe they could whip up some corn fritters on a bed of fresh spinach. (Followed by creme brulee!)
